To make a Peach Skillet Cake
Ingredients- 1.25 cups GF sorghum flour, 1tsp baking soda, 0.25tsp salt, 4tbsp butter, 0.75 cups sugar, 3 eggs, 1tsp vanilla extract, 0.25 cups plain yoghurt, 2 fresh ripe peaches, 2tsp cinnamon (for top), 2tbsp sugar (for top).
Method - Preheat the oven to 150C. Grease a 30cm skillet or round dish. Combine sorghum flour, baking powder, baking soda and salt and set aside. beat butter and sugar together until light and fluffy, add vanilla and beat in the eggs and yoghurt. Add dry ingredients and mix until smooth. Pour into the skillet and place peach slices in a spiral on top. Sprinkle with cinnamon and sugar and bake for 30 to 35 minutes until golden brown.
Storage:
Store in a cool, dry place away from direct sunlight and heat
